Pour the chocolate chips into a microwave safe bowl. Using an ice cream scoop, scoop out portions of the mixture onto a lined baking sheet. Once melted, fold through the coconut flakes until combined. You should store in an airtight container in the fridge for up to a month. Start by melting your chocolate either in the microwave or stovetop. Don’t forget to swirl the pan or stir the peanuts with a spoon to avoid them burning. If your peanuts are not roasted, you can place the peanuts in a medium pan and toast at medium heat until they give off their aroma. You should let them set in the fridge at least 45 minutes. If you use 200 grams of peanuts, you should use 300 grams of chocolate. You can go up to 1:1.5 ratio (peanuts to chocolate) if you prefer more chocolate. This is my favorite ratio for chocolate peanut clusters. I use chocolate just enough to cover the peanuts and make crunchy chocolate covered peanuts. If I use 200 grams of peanuts, I use 250 grams of chocolate. My ratio of peanuts to chocolate is 1:1.25 by weight. Chocolate-I use chocolate with 54% cocoa, you can use milk chocolate or a mixture of dark and milk chocolate if you prefer.You can use salted or unsalted, they are yummy in each option.
